It started as an emulsified blend of colby and cheddar, and was originally more white in color. Today, it has essentially the same ingredients as cheese, but with more whey proteins and enzymes and other stuff. Because of the screwy ratio of ingredients, it cannot legally be sold as "Cheese". So no, it's not even real cheese.
Yeah if anything it's closer to like the velveeta "Cheese product" at this rate. I think legally it's called "processed cheese", "cheese product", "cheese food", etc. As a result, sometimes even the word "cheese" is absent. In the UK i think they call it cheese slices or something to that effect. Really only in America do we have food that's bastardized to the effect it's not legally recognizable as food.
Anyhow much Like Nemesis Maximo, I like Smoked Gouda on my toasted sandwich. Sometimes when I feel daring, I put on blue cheese crumbles.
